<p><span style="font-family:Comic Sans MS;">Free radicals are molecules with electrons that are unpaired. This kind of molecule is unstable and reactive. Free radicals steal electrons from other stable molecules in order to become stable themselves. When a stable molecule loses an electron to a free radical, it becomes another free radical, and so chain reaction begins.<br />
It is known that diet, exposure to toxins, radiation and certain medications increase number of free radicals. It has been establish that more than sixty human diseases involve free radical damage, including cancer, heart disease and immune system decline.<br />
The three major antioxidant nutrients are vitamin A as a Beta Carotene, vitamin C and vitamin E.</span></p>
<p class="subtitle"><span style="font-family:Comic Sans MS;"><strong>Vitamin A</strong></span></p>
<p><span style="font-family:Comic Sans MS;">Vitamin A is a fat-soluble vitamin that occurs in two forms in nature. It is found in its true form (also called <strong>retinol</strong>) in animal foods such as fish oils and liver. The body readily uses this form.<br />
Vitamin A can be found in vegetables in the form of <strong>Beta Carotene</strong> or provitamin A. This form is found in plants and is the precursor of the actual vitamin. Beta Carotene has to be converted in the body in order to be used by it. Fat and bile are needed for the conversion.<br />
Vitamin A is necessary for proper function of the eyes and for maintenance of the skin. Beta Carotene is one of the most powerful antioxidant nutrients. It can prevent free radical formation and activate existing free radicals. After free radicals have been formed, it traps them and breaks the chain reaction that they cause. Beta Carotene also works to destroy carcinogens (censer-causing substances).<br />
All retinoid forms of vitamin A are used in cosmetic and medical applications applied to the skin.<br />
The liver regulates the blood level of vitamin A. It needs a special protein carrier to be transported throughout the body. An adequate protein and fat intake is required for a good absorption of vitamin A. It won’t be absorbed on a no-fat diet. At list 5 gr. of fat/day are necessary for adequate vitamin A adsorption.</span></p>
<p class="subtitle"><span style="font-family:Comic Sans MS;"><strong>Vitamin C</strong></span></p>
<p><span style="font-family:Comic Sans MS;">Vitamin C has an important role in various body processes necessary for life. Of key importance is its role in collagen formation. Vitamin C functions as a one of the most powerful free-radicals to prevent damage that contributes to aging and age-related diseases. It works against pollution and toxins that damage cells and cause mutation. Vitamin C is also critical for the immune system, it may increase immunity to infectious diseases, may lower cholesterol, and enhances the effect of vitamin E. It also promotes wound healing, tissue repair and helps in the utilization of iron; reduce the symptoms of asthma and allergies.<br />
Vitamin C is water soluble and should be taken with water.</span></p>
<p class="subtitle"><span style="font-family:Comic Sans MS;"><strong>Vitamin E</strong></span></p>
<p><span style="font-family:Comic Sans MS;">Vitamin E works to prevent aging by prolonging the useful life of cells in the body. One of vitamin E abilities is that it can stop a wildly proliferating free radicals chain reaction as it is happening. Too many nutrients may cause the cell to grow irregularly and too few nutrients will starve the cell and kill it. By protecting the cell membrane, vitamin E combats disease.<br />
Vitamin E is a lipid-soluble and should be taken with fatty food during the meal.</span></p>

<p>Every February we celebrate Valentine&#8217;s Day by giving flowers and gifts to  					those we love. We do this in honor of Saint Valentine. You may be wondering,  					&#8220;Who is St. Valentine&#8221;? Legend has it that Valentine was a priest who served  					during third century Rome. Emperor Claudius II decided that single men made  					better soldiers than those that were married. With this thought in mind he  					outlawed marriage for young men in hopes of building a stronger military base.  					Supposedly, Valentine, decided this decree just wasn&#8217;t fair and chose to marry  					young couples secretly. When Emperor Claudius II found out about Valentine&#8217;s  					actions he had him put to death.</p>
<p>Another legend has it that Valentine was an imprisoned man who fell in love with  					his jailor&#8217;s daughter. Before he was put to death he sent the first &#8216;valentine&#8217;  					himself when he wrote her a letter and signed it &#8216;Your Valentine&#8217;, words still  					used on cards today. Perhaps we&#8217;ll never know the true identity and story  					behind the man named St. Valentine, but this much is for sure&#8230;February has  					been the month to celebrate love for a long time, dating clear back to the  					Middle Ages. In fact, Valentines ranks second only to Christmas in number of  					greeting cards sent.</p>

Our <em>enzyme </em>&#8216;bank account&#8217; becomes depleted as we age and the metabolism slows.  <strong>Yet another reason why people gain weight as they age.</strong>Digestive problems are the first indication that the <em>enzymes </em>in our bodies are being depleted.

<p>How many older people do you know who have digestive concerns. A good number of them, right?  How many younger people do you know who complain about digestion. Hardly any, but still some.</td>

<p>I recently tried the wheat berry salad in Whole Food store. It was made from wheat berries, raisin, honey, almond chips and a little bit of parsley and honey. It reminded me the salad which we had back in Ukraine for Orthodox Easter. Just we had it with crashed poppy seeds and a little bit of cream.What are wheat berries?A wheat berry is actually the unprocessed wheat seed, also known as the kernel. Wheat berries contain the whole grain &#8212; endosperm, bran and germ &#8212; and that&#8217;s what makes them so healthful. They contain all of the fiber, protein, carbohydrates, iron as well as many B-complex, minerals, and phytonutrients that are removed during the refinement.<br />
The bran makes up nearly 15 percent of the wheat berry. It&#8217;s included in whole-wheat flour, but not regular flour. You can find wheat berries in health-food stores.<br />
Some guidelines for cooking wheat berries call for soaking them overnight, but often you can just cook them for an hour or two to get the same result. The more they&#8217;re cooked, the softer they get,<br />
personally I like a nutty, crunchy texture.<br />
Recipes with wheat berries you can always find on the Internet; you might find the wheat berry salad I recently enjoyed, as well<br />
as other salads and ideas.If you have gluten tolerance, you probably can not enjoy the Wheat Berries dishes. Wheat allergy occurs when there is an allergic reaction to gluten (the protein found in wheat, rye, barley and oats). Gluten refers to a group of proteins that are difficult for humans to digest.</p>

<p><b><font size="4">Wheat Berry Waldorf Salad </font></b><br />
<i>From The Whole Foods Market Cookbook</i></p>
<p>Wheat berries are the mother grain from which pasta, bread, and flour are<br />
derived. Most of us have never tasted the true flavor of wheat. Little wheat<br />
berries pack a nutlike flavor and are pleasantly chewy. Use a crunchy, firm,<br />
sweet-tart apple (such as a Granny Smith or Gala) for this salad. Lemon juice<br />
and vinegar keep chopped apples from darkening so you may make this salad the<br />
day before serving. Try substituting dried apples for the fresh ones for another<br />
flavor variation.</p>
<p><b>Serves 8</b></p>
<li>2 cups wheat berries</li>
<li>7 cups water</li>
<li>1 cup chopped walnuts</li>
<li>2 medium apples, unpeeled, cored and chopped</li>
<li>1 cup raisins</li>
<li>1 cup finely chopped parsley</li>
<li>1/4 cup apple cider vinegar</li>
<li>1/2 cup apple juice</li>
<li>1 tablespoon salt</li>
<li>1/2 teaspoon freshly ground pepper</li>
<li>1/2 teaspoon ground nutmeg</li>
<li>1/2 teaspoon cinnamon</li>
<li>1/2 cup extra-virgin olive oil</li>
<li>1/8 cup lemon juiceSoak the wheat berries at least 6 to 8 hours or overnight in water to cover by a couple of inches. Drain the water, and set aside.<br />
In a saucepan, bring the 7 cups water to a boil. Add the soaked wheat berries and turn down to a simmer, uncovered, for about 50 minutes or until they are totally cooked through. Wheat berries retain a firm, chewy texture when cooked. Drain the water and set aside to cool.<br />
When cool, transfer the wheat berries to a large mixing bowl and add the walnuts, apples, raisins, parsley, apple cider vinegar, apple juice, salt, pepper, nutmeg, cinnamon, olive oil and lemon juice. Mix everything together thoroughly. Add more salt if necessary and serve.Enjoy, and be healthy!</li>
